Most of my waking hours in Calais are spent prepping vegetables in an industrial kitchen alongside friendly strangers. We shout our life stories to each other over upbeat music in a frenetic space where cooking aromas compete. The atmosphere lifts our spirits above the heavy truth of why we're here.
