St Kilda has welcomed Loti, bringing Mediterranean vibes to the seaside suburb. Located within the new Saint Moritz precinct, Loti’s head chef Elijah Holland will showcase the skills he honed while working across Lume, Noma Australia, Aria and Quay, with a focus on fermentation, cooking over fire and coastal ingredients. Think butter-poached lobster pasta, where the whole lobster has been wrapped in kelp and barbecued with lemon scented tea tree; or turbot ribs with sea parsley, grilled lettuce and capers.
