Umami kick Beef & black bean sauce
SERVES 4
BLACK BEAN SAUCE
• 3 tbsp dried fermented black beans (or use tinned pre-soaked black beans)
• A little vegetable oil (if needed)
• 1 large onion, cut into large cubes
• ½ thumb-sized piece grated fresh ginger root
• 2 large garlic cloves, grated
• ½ chicken stock cube, crumbled
• 1 large red pepper, deseeded and cubed
• ½ tsp caster sugar (optional) • 1 tbsp cornflour paste
• 2 spring onions, sliced diagonally
• Sea salt & white pepper
BEEF
