Bobotie with yellow cauli-rice
This version doesn’t include the soggy bread, but you’ll never know it!
SERVES 6 TO 8
INGREDIENTS
• 1T avocado oil
• 1 small onion, chopped
• 1kg minced beef
• 1 ½ tsp garlic granules or powder
• 2t curry powder
• 2T garam masala
• 1t ground mixed spice
• ½ tsp ground cumin
• 1½ tsp ground turmeric
• 1t chilli powder
• 1t mixed herbs
• 1½ tsp pink salt
• 2T raw honey, or coconut sugar or sweetener
• 30g raisins/sultanas
• 4T apple cider vinegar
FOR THE EGG TOPPING
• 3 free-range eggs
• 250ml nut milk
• 125ml coconut cream
• 3 bay leaves
FOR THE YELLOW CAULI-RICE
• 500g cauliflower, chopped into chunks
• 140g cashew nuts
• 3t ground turmeric
• ½ tsp pink salt
• 1t garlic granules
• 1t ground cinnamon
• ½ tsp ground cumin
• 3T avocado oil
METHOD
Preheat the oven to 180°C
