VEGGIE DISHES FROM THE HEART

Over a decade ago, when Kathy Slack moved from London to the Cotswolds to find some escape from the rat race, little could she have imagined how her life would change. By 2012, a few years later, she was burnt out from her ‘plugged-in, horse-trading, Blackberry-addicted’ days and gave up her job as global strategy director for an advertising agency. She remembers: ‘Jobless and dysfunctional, I found solace in the garden, pulling up weeds and scattering a few old vegetable seeds on a bare patch of soil. Despite my haphazard care and wandering attention, the seeds grew and we ate our first homegrown meal. Sure, it was just lettuce and radishes, but it felt like I had conjured them out of thin air. I was hooked.’

What followed was a renaissance – she started writing her award-winning food blog, Gluts & Gluttony (about, encapsulates this incredible journey, featuring 100 recipes using 10 of her favourite veg. Here we present three of the most delicious as a taster of her life-affirming, veggie-centric world.
