2 tsp olive oil2 onions (400g), halved2 aubergines, halved and thickly sliced40g ginger, cut into fine slices1 garlic clove, crushed40g fresh turmeric, grated or 1 tsp ground½ tsp allspice2 tsp each cumin seeds and ground coriander400g can chickpeas2 red peppers, deseeded and diced2 tsp bouillon powder50g dried apricots, halved600g pack skinless chicken thigh fillets, all visible fat trimmed off, cut into large chunks20g pack coriander, chopped560g large potatoes, very thinly sliced (no need to peel)
