NOW TO skin the carcass. If you intend making your biltong at home, which could mean the carcass hangs in camp a day or so, it is best to leave the skin on, as this prevents flies laying eggs in the flesh. This will, however, render the skin worthless for tanning except perhaps as bare leather.
