res leches cake originated in Latin America – it’s made by soaking sponge cake in three types of milk (usually they are evaporated and condensed milk and double cream). This results in a sweet, milky flavour and a pillow-soft pudding texture. It’s topped with billows of whipped cream and often a pinch of cinnamon or drizzle of dulce de leche, but I think the addition of strawberries takes it to another level. In summer, when strawberries are at their best, this is the dessert I always take to garden parties. You can make it ahead (in fact, it benefits from being chilled)
