Salmon Poke Bowl SERVES 4 PREP + COOK 35 MINUTES
INGREDIENTS
500g broccoli, cut into florets
1 tblsp extra-virgin olive oil
3 tsps finely grated lemon rind 250g baby cucumbers (Qukes)
2 cups (160g) finely shredded red cabbage (see Tip)
4 green onions (100g), sliced thinly 2 tblsps Japanese (kewpie) mayonnaise
2 tblsps lemon juice
400g skinless boneless salmon, centre-cut piece 2 tblsps Korean red pepper flakes (gochugaru)
