Cinnamon parfait

A tasty treat that’s just perfect for winter!

SERVES 4 Preheat oven to 180ºC. For the cinnamon parfait, bring a saucepan of water to a simmer. Place 2 egg yolks, 3 tbsp caster sugar and 1 tsp ground cinnamon into a bowl and whisk over simmering water until pale and thick. Remove from heat, set aside to cool. Whisk 200ml thickened cream to soft peaks, then into yolk mixture
