Melt ‘n’ Mix Strawberry Yoghurt Cake

SERVES 8 PREP + COOK 1 HOUR 15 MINUTES

INGREDIENTS

2½ cups self-raising flour
250g strawberries, chopped coarsely
1 cup golden caster sugar
1 tsp vanilla bean paste
2 free-range eggs, beaten lightly
1 cup Greek yoghurt
125g unsalted butter, melted ½ cup flaked almonds
Icing sugar, for dusting
1 cup Greek yoghurt, extra

MACERATED STRAWBERRIES

250g strawberries, sliced
1 tblsp lemon juice
1 tblsp golden caster sugar

METHOD

1 Preheat oven to 180°C/160°C fan-forced. Grease a 22cm springform pan; line base and side with baking paper.
