PEACH, QUINOA & ALMOND CAKES
These little cakes are light, moist and elegant, and the use of quinoa makes a delightful change from the more familiar polenta, while roasting the peaches in dessert wine adds a touch of decadence. Grains combined with fruit purée and syrup make for cakes that are as lovely served for afternoon tea as they are for dessert. These cakes are perfect for high summer, when peaches are at their best, particularly when served with a chilled dessert
