Peach Pie Party

FRESH PEACH PIE WITH ALMOND WHIPPED CREAM

Makes 1 (9-inch) pie

Double Piecrust (recipe follows)
6 large peaches, peeled, pitted, and sliced (about 6 cups)
1 cup plus 1 tablespoon granulated sugar, divided
½ cup potato starch
2 tablespoons fresh lemon juice
⅛ teaspoon kosher salt
1 cup plus 1 tablespoon cold heavy whipping cream, divided
3 tablespoons confectioners’ sugar
1 tablespoon almond liqueur or
¼ teaspoon almond extract
Garnish: fresh mint

1. Position oven racks in center and bottom of oven. Preheat oven to 425°.

2. Let Double Piecrust stand at room temperature for 15 minutes.

Meanwhile, in a large bowl, stir together peaches, 1 cup granulated sugar, starch, lemon juice, and salt. Let stand for 15 minutes.
