After multiple weather postponements, the unofficial Cashmere 4WD Club went on its annual R’n’R swimming and exploration trip to the Clarence River Valley. The convoy included some of the usual suspects, plus our friends Sophie and Nath joining for the first time with their VW Amarok. Seeing the expansive, unique Clarence landscape through the eyes of newcomers is so fun; it felt like I was taking in the jagged mountains and crystal blue water for the first time, again.
Instead of describing a play-by-play of the panoramic views and bog holes, I thought I would share our day of our driving, along with the meals I made to power us through (and some recipes at the end). See the thing is, I’m a bit high maintenance when it comes to food, even in the middle of nowhere. I’m not talking in the ‘I-don’t-eat-glutenor-dairy-or-sugar’ kind of high-maintenance (I don’t hate myself), just in the way that I want to eat tasty food, even on a 4WD trip. I can only do a sausage wrapped in white bread with some sauce about once a year.
