Lentil Bolognese

1. Heat 3 Tbsp olive oil in Dutch oven on medium. Add 1 onion (finely chopped), season with ½ tsp each kosher salt and pepper and cook, covered, stirring occasionally, 4 min. Increase heat to medium-high, add 8 oz cremini mushrooms (trimmed and chopped in food processor) and cook, stirring occasionally, until deep brown and beginning to stick, 8 to 10 min.

Reduce heat to medium, stir in 2 large (finely chopped) and ¼ to ½ tsp and cook 1 min. Stir in 3 Tbsp and cook, stirring, until dark brown, 2 min. Stir in ½ cup , scraping up any browned bits, then stir in 1 cup , one 14.5-oz can , 2 cups water and 1 Tbsp (we used Better Than Bouillon). Bring to a boil, then simmer until lentils are tender, 30 to 35 min. Meanwhile, cook 1 lb per pkg. directions. Serve sauce over pasta, topped with chopped if desired.
