1. Heat oven to 425°F. Roll out and fit 1 pie crust (homemade or refrigerated rolled) into and up side of pie plate; fold edge of dough underneath to create thicker rim and crimp as desired. Place on rimmed baking sheet, prick bottom all over with fork and bake until light golden brown, 12 to 15 min. Remove from oven; lower temp to 375°F.

Meanwhile, in large skillet on medium, cook, flipping once, until crisp, 5 to 6 min. Transfer to paper-to-wellined plate. Discard all but 1 Tbsp drippings, add 1 large (finely chopped), season with ¼ tsp each and and cook, covered, stirring occasionally, until tender, 6 to 8 min. Remove from heat and stir in ¾ cup (chopped) and reserved bacon (crumbled).
