MONDAY

KING PRAWN & ASPARAGUS STIR FRY

PREP TIME 10 MINUTES COOKING TIME 10 MINUTES SERVES 2

INGREDIENTS

• 250g king prawns • 1 thumb-sized piece of ginger • 1 tbsp olive oil, plus more for frying • 150g asparagus bundle • 1 pak choi • 1 red chilli • 2 x noodle nest • 1 tbsp ketjap manis (sweet Indonesian soy sauce) • Pinch of salt

METHOD

1 Pat the prawns dry. Peel and grate ginger. Put together in a medium bowl. Pour over the olive oil and season with salt and pepper. Toss to coat and set aside to marinate for a few minutes. Wash hands and equipment after handling raw prawns.

2 Trim the bottom 2cm off the asparagus and discard. Cut into quarters, on an angle. Trim the pak choi, then thinly slice widthways. Halve the chilli lengthways, deseed then thinly slice.
