CHICKEN & MUSHROOM PIES
SERVES 4 PREP 10 MINS COOK 35 MINS
• 1 tbsp olive oil
• 1 onion, thinly sliced
• 2 tsp thyme leaves
• 3 chicken fillets, 2cm pieces
• 200g Swiss mushrooms, sliced
• 2 cups skim milk
• 2 tbsp cornflour
• 4 green onions, chopped
• 4 sheets filo pastry
• salad, to serve
1 Preheat oven to 200°C. Place four 1-cup ovenproof dishes on an oven tray.
2 In a frying pan, heat oil on medium. Saute onion and thyme 2 mins. Add chicken and mushrooms in batches. Cook 4-5 mins each. Transfer to bowl.
