BERRY CHEESECAKE SLICE

SERVES 18 PREP 30 MINS + CHILLING & SETTING COOK 5 MINS

• 250g packet butternut biscuits, broken
• 100g butter, melted
• 2 tsp powdered gelatine
• 2 tbsp just-boiled water
• 375g cream cheese, softened
• ½ cup caster sugar
• 300ml thickened cream
• 1 tsp vanilla extract

BERRY TOPPING

• 2 tbsp caster sugar
• 1 tbsp water
• 300g frozen mixed berries

1 Lightly grease 20 x 30cm slice pan. Line with baking paper.

2 In a food processor, pulse biscuits until crumbs form. Add butter. Process until it comes together. Press firmly and evenly over base of pan.
