6 egg whites
pinch of cream of tartar
1½ cups (330g) caster sugar
1 tablespoon cornflour
1½ teaspoons white vinegar
2 teaspoons pure vanilla extract
1¾ cups (430ml) thickened cream
½ cup (125ml) pure pomegranate juice
¼ cup (90g) honey
6 figs, halved
4 plums (450g), cut into wedges
1 pomegranate (320g), seeds removed (see tip)
