Asparagus Charlotte with Smoked Salmon p.83
Makes 1 (6-inch) tart
2 (8-ounce) packages cream cheese, softened
¼ cup heavy whipping cream
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
⅓ cup minced fresh dill
2 tablespoons drained and minced capers
2 (4-ounce) packages smoked wild Alaskan salmon
½ pound thin green asparagus
½ pound thin white asparagus

Pumpernickel Crostini (recipe follows)
1. Line a 6-inch springform pan or round cake pan with plastic wrap.
2. In a large bowl, beat cream cheese, cream, lemon zest, and lemon juice with a mixer at medium speed until smooth. Beat in dill and capers.
Arrange 2 to 3 slices salmon in a single layer in bottom of prepared pan. Spread approximately ¼ cup cream cheese mixture over salmon. Top with a second layer of salmon. Repeat
