Smoked Salmon & Leek Cutie-pies made with Avocado Pastry

Caa-ute! I love a rustic pie, and these are perfect for brunch, lunch or dinner. The avocado pastry keeps its gorgeous green hue and is nutty and moreish.

Makes 4 small pies

Avocado Pastry

cups almond meal
1 tsp baking powder pinch of salt
1 firm but ripe avocado, cubed
1 cup shredded mozzarella cheese

Filling

1 leek, washed and trimmed knob of butter splash of olive oil
100g cold-smoked salmon

To serve

4 tbsp crème fraîche
1 heaped tsp grated horseradish, or to taste
¼ red onion, finely chopped juice of ½ lemon big pinch of ground sumac
1 tbsp capers fresh dill or chives sea salt and black pepper

First, prepare the toppings. Mix the crème fraîche with the horseradish and place in the fridge until needed. Mix the red onion with the lemon juice and sumac and set
