ASIAN-STYLE MUSSELS

INGREDIENTS
• 1.5kg/31/4lb fresh MSC mussels in their shells• 1 tbsp fish sauce• 2 cloves garlic, peeled and finely chopped• A thumb-size piece of fresh ginger, peeled and finely diced• 1 red chilli, deseeded and cut into thin rings• 2 lemongrass stalks, trimmed to about 3cm/11/4in long, and cut in half lengthwise• 2 tbsp fresh lime
