    2 star anise
    Zest of one orange, removed with a potato peeler

    For the cake batter

    125g butter180ml light-brown sugar 125ml golden syrup125ml molasses2 extra-large eggs180ml Greek-style10ml fresh ginger, grated 500ml self-raising flour10ml ground ginger 5ml ground cinnamon5ml mixed spice3ml ground nutmeg
