The beauty of a seafood platter is that in Australia we are blessed with a great variety of it and it involves very little time in the kitchen. With seafood the name of the game for this board, ensure you’re sourcing impeccably fresh seafood up to a day ahead. Due to seafood’s perishability, serve items over crushed ice, and consider topping up the platter instead of putting everything out at once. For further ease, provide bowls for spent shells, plenty of napkins, and finger bowls of water and lemon, if guests are expected to peel their own prawns.
