COUNTDOWN TO EARTH DAY

Every day we make choices in our lives that affect the environment, our climate and the world around us, so now more than ever, it’s time to adopt a few new habits and eliminate some of the things that aren’t so great. To empower you and your family with motivating ideas, we’ve created 22 daily activities to take you from April 1st right through to Earth Day on April 22nd. It takes 21 days to make a new habit, so by Day 22, you will have found the way! Remember that “small acts, when multiplied by millions of people, can change the world.” Let’s get started now.

1 Regrow your vegetable scraps to use sandwiches and salads.

Urban homesteader and Simple Bites Kitchen author Aimée Wimbush-Bourque shares her top tips: Gather your vegetable scraps like green onions, celery, fennel, romaine lettuce, garlic and bok choy. Place them in a tray or collection of small kitchen bowls — any vessel that will hold a bit of water and isn’t tippy. Add 1 inch of cool tap water around the vegetables, taking care not to submerge them. Taller vegetables like green onions can go into a Mason jar. Set them in a bright spot and change the water daily. Regrowth will start after about 4 to 5 days.

2 Eat mindfully and reduce food waste.

“There’s an Italian expression, il pane e oro (bread is gold), that inspires me to never, ever throw out bread,” says Chef Claire Tansey. “Instead, I often turn it into crunchy croutons that turned out to be the gateway to loving salad for my 9-year-old son.”

To make this she infuses a mixture of butter and oil with garlic before crisping up the bread cubes. The oil prevents the butter from burning, and the butter makes everything taste like heaven. Try to get the cubes all about the same size so they cook in the same amount of time. Feel free
