MAPLE WALNUT BRITTLE

Prep time: 5 minutes Cook time: 20 minutes, plus cooling

Tip: It’s best to make this recipe with a candy thermometer.

• 200g / 7oz walnuts
• 1 cup caster sugar
• 1/2 cup pure maple syrup
• 1/4 cup water
• 200g / 7oz unsalted butter

1. Preheat oven to 150°C / 300°F / Gas Mark 2. Place walnuts on a lined baking tray and place in the oven to lightly roast and keep warm.

2. Place a few sheets of baking paper on a clean work surface.

3. Place sugar, maple syrup and water in a clean saucepan and bring to a simmer, stirring gently to dissolve sugar. When fully dissolved, add butter and stir gently to combine.

4. Allow mixture to simmer on medium heat until the mixture has reached 150°C / 300°F or ‘hard ball’
