SWEET POTATO NACHOS

Serves 4 Takes 50-55 minutes

Suitable for vegetarians

INGREDIENTS

• 4 medium sweet potatoes (around
600g/1lb 5oz), peeled and sliced into 5mm/1/in thick coins
• 1 tbsp light olive oil
• 1 tsp salt
• 60g/21/oz cheddar, grated
• 4 tbsp low-fat natural yoghurt, to serve

For the spiced mince

• 1 tbsp oil• 1 red onion, peeled and diced• 100g/4oz veggie mince (or minced beef)• 1/tsp ground cumin• 1/tsp ground coriander• 1/tsp smoked paprika• A pinch• 130g/41/oz frozen sliced bell pepper (or the same amount of fresh, sliced)
