King Louis XVI of France had some assistance in improving the reputation of the humble potato. The hero was one Antoine-Augustin Parmentier (1737–1813), a pharmacist in the French army. He was taken prisoner in Prussia during the Seven Years’War and survived on potatoes for three years. After the war he made it his life’s work to convince the suspicious French people of the value of potatoes.
