Simple Snack
Welsh rarebit & leek toast
SERVES 1
INGREDIENTS
• 2 large slices of bread of your choice
• 1 tbsp butter
• 100g grated cheddar
• 110ml whole or oat milk
• ¾ tsp Worcestershire sauce
• 1 tsp English mustard (or ½ tsp Dijon mustard)
• ½ small leek, diced
• Pinch salt
• Fresh herbs
Start by preheating the grill, then lightly toast two slices of bread on both sides. In the meantime, melt the butter, grated cheese, Worcestershire sauce, mustard and milk together in a non-stick pan, then slice the leeks,
