Let’s go MEXICAN

FULLY LOADED FAJITA BEEF POTATO WEDGES

SERVES 4-6 PREP AND COOK: 45 MINS

1kg large red delight potatoes, halved, cut into 2cm wedges
½ tsp salt
1 tsp onion powder
1 tsp garlic powder
1 cup grated Mexican cheese blend
¼ cup chipotle aioli
2 tblsps lime juice
1 green spring onion, finely chopped

FAJITA BEEF MINCE

300g beef mince
5 green spring onions, chopped
2 tsps fajita spice mix
1 tsp ground cumin
½ x 400g can rich and thick chopped tomatoes

1 Toss potatoes in an oiled large oven tray. Arrange in a single layer. Sprinkle with combined salt, onion powder and garlic powder.

2 Cook in a very hot (220°C) oven for about 30 minutes, or until tender and golden.

Meanwhile, to make fajita beef mince, heat an oiled, medium frying pan over a high heat. Add mince and onion.
