1 tbsp cornflour1 tsp Sichuan peppercorns1 tbsp rapeseed oil2 garlic cloves, peeled and finely chopped2.5cm piece of ginger, peeled1 red chilli, deseeded and finely chopped200g fine French beans, trimmed and sliced into 1cm chunks200g firm tofu, drained and sliced into 1.5cm cubes1 tbsp chilli bean paste1 tbsp Shaoxing rice wine or dry sherry200ml cold vegetable stock1 tbsp tamari or low-sodium light soy sauce1 tsp Chinkiang black rice vinegar2 spring onions, trimmed, sliced cooked jasmine rice, to serve
