In the very early hours of a Christmas morning, Dina Macki and her mum Kamila, 61, are already in the kitchen. A few doors down, her grandmother Hashum, known as Bibi, rises to set to work on her own Christmas offering. The family’s Zanzibarian-Persian-Omani dishes take hours to perfect and weeks of family discussions to organise.

Dina, 27, who works for the Anglo-Omani Society, says, ‘Before the pandemic, our Christmas gatherings were huge. At least 40 of us would come together and everyone would get involved with the cooking.’
