Beef pörkölt stew with tarhonya

SERVES 6 // PREP & COOK TIME 1 HR 50 MINS (PLUS STANDING)

Pörkölt is a slow-cooked Hungarian stew, enriched with sweet paprika. Tarhonya are the small pasta-like pieces stirred through the stew to cook minutes before serving.

1.2 kg beef chuck steak, cut into 3cm pieces
60 ml (¼ cup) extra-virgin olive oil
2 onions (300gm), thinly sliced
200 gm smoked streaky bacon, diced
3 green capsicums (600gm), chopped
5 garlic cloves, thinly sliced
2 tomatoes (300gm), chopped
70 gm (¼ cup) tomato paste
¼ cup sweet Hungarian paprika
2 tsp caraway seeds
1 litre (4 cups) beef stock
2 fresh bay leaves
600 gm potatoes, peeled, cut into 3cm pieces
120 gm (½ cup) sour cream
2 tbsp fresh parsley, chopped
