1 tbsp olive oil
1 shallot, sliced thinly
1 tsp cumin seeds
400g can red kidney beans, drained, rinsed
35g sachet taco seasoning mix
12 small blue or white corn tortillas (300g)
200g red grape tomatoes, sliced
1 large avocado (320g), sliced
1 cup coriander leaves
2 medium limes (180g), cut into wedges
