SILVERSIDE HASH & POTATO HERB SALAD
SERVES 4 PREP 20 MINS COOK 25 MINS
• 4 potatoes, peeled, 3cm chunks
• 300g cooked silverside, trimmed
• 150g green beans, 5cm lengths
• 1 tbsp water
• 50g butter
• 1 tbsp olive oil
• 2 tsp wholegrain mustard
• 1½ tbsp white vinegar
• 4 eggs, at room temperature
• 2 spring onions, sliced diagonally
• ¼ cup roughly chopped parsley
1 Cover potatoes with cold, salted water. Boil on high 10 mins until almost tender. Drain. Return to pan. Shake over heat 30 secs.
2 In microwave-safe bowl, combine silverside and beans with water. Cover. Microwave on High 1-2 mins. Drain. When
