SILVERSIDE HASH & POTATO HERB SALAD

SERVES 4 PREP 20 MINS COOK 25 MINS

4 potatoes, peeled, 3cm chunks
300g cooked silverside, trimmed
150g green beans, 5cm lengths
1 tbsp water
50g butter
1 tbsp olive oil
2 tsp wholegrain mustard
1½ tbsp white vinegar
4 eggs, at room temperature
2 spring onions, sliced diagonally
¼ cup roughly chopped parsley

1 Cover potatoes with cold, salted water. Boil on high 10 mins until almost tender. Drain. Return to pan. Shake over heat 30 secs.
