Question: Every jar of bought olives in my pantry says that, once opened, the contents must be refrigerated and eaten within 15 days (or thereabouts). Why is this? Surely, with refrigeration, they could be consumed safely over a much longer time. Is this just a ploy to encourage us to discard them and buy more, or is there a health risk?
