CONFIT OF COD ON RATATOUILLE

SERVES 4

FOR THE FISH

● 4 cod fillets (each approx 175g)
● 2 red chilli peppers
● 600ml olive oil
● 3 bay leaves
● 5cm piece of organic lemon peel
● Sea salt
● Smoked paprika

FOR THE RATATOUILLE

● 1 red sweet (bell) pepper
● 1 yellow sweet (bell) pepper
● 1 small courgette
● ½ aubergine
● 1 shallot
● 2–3 garlic cloves
● 6 tbsp olive oil
● 2 tsp thyme leaves
● Salt and freshly ground black pepper
