For the cookie layer
100g (3½oz) butter, softened
175g (6oz) light brown soft sugar
1 free-range egg
200g (7oz) plain flour
100g (3½oz) Crazy Jack Ground Almonds
½ tsp bicarbonate of soda

175g (6oz) butter, diced
180g (6oz) plain chocolate, chopped
3 free-range eggs
250g (9oz) caster sugar
125g (4½oz) plain flour
50g (1¾oz) Crazy Jack Whole Almonds, roughly chopped
50g (1¾oz) Crazy Jack Cashews, roughly chopped
