MEXICAN BEEF BURGERS
SERVES 4 PREP AND COOK: 20 MINS
1 tblsp taco seasoning
500g 4-pack beef burgers
4 Tasty cheese slices, folded in half diagonally
4 large, round soft white rolls
4 lettuce leaves
2 vine-ripened tomatoes, sliced
GUACAMOLE
1 large avocado, chopped
1 tblsp lemon juice
2 green spring onions, finely chopped
1 Sprinkle taco seasoning over both sides of the beef burger patties.
2 Heat an oiled, non-stick frying pan over a medium heat. Add patties and cook for about 4 minutes on each side, or until cooked through, topping patties with cheese slices in the last 2 minutes of cooking.
Meanwhile, to make guacamole, combine avocado and lemon juice in a medium bowl. Season with salt and pepper. Mash with a fork. Stir in onions.
