SPICY PRAWN TARTLETS
MAKES 20 PREP 45 MINS COOK 30 MINS
• olive oil cooking spray
• 20 wonton wrappers
• 20 medium green prawns, peeled and deveined
• 2 tbsp olive oil
• 2 garlic cloves, crushed
• 2 tsp lemon pepper spice blend
• ½ tsp dried chilli flakes, plus extra to serve
• 1½ avocados
• 2 tbsp Japanese mayonnaise
• 1 lime, finely grated zest and juice
• finely chopped parsley, to serve
1 Preheat oven to 200°C. Grease 20 holes of a mini muffin pan with oil. Line holes with wonton wrappers. Spray with oil.
2 Bake 13-15 mins or until lightly golden and crisp. Transfer cups to a wire rack to cool.
3 Cut prawns in half horizontally through centre. Combine prawns, oil, garlic, lemon pepper and chilli.
