FESTIVE REFRESH!

Caesar Prawn Bruschetta

Serves 6, Prep and Cook 45 mins

6 thick slices pane di casa bread
2 tblsps olive oil
1/3 cup grated parmesan
6 slices prosciutto
1 baby cos lettuce, chopped
12 cooked, large tiger prawns, peeled, deveined, leaving tails intact
Micro parsley, to garnish

CAESAR DRESSING (Makes 1 cup)

2/3 cup whole egg mayonnaise
¼ cup grated parmesan
1 clove garlic, crushed
1 tblsp Dijon mustard
2 anchovies, chopped
1 tblsp lemon juice

1 Place bread in a single layer on a large oven tray. Drizzle with oil. Sprinkle evenly with parmesan.

2 Cook in a moderate oven (180C) for about 20 minutes, turning halfway, or until golden brown and crisp. Arrange prosciutto on a separate large oven tray. Cook in same oven for about 8 minutes, or until crisp. Remove from oven. Cool on trays. Break prosciutto into small pieces.
