Take a New Crack at Cracking Eggs

Many cooks crack eggs the way they learned growing up, without giving it much thought. But each of the two most common methods—breaking the shell on the rim of a bowl or breaking it against the flat surface of a countertop—has benefits and drawbacks. Read on, and you might be convinced to change your cracking style. –L.L.

PROS

More control: The shell usually breaks along the equator. Cleaner break: The rim of the bowl is more likely to tear the shell’s membrane, making it easier to separate the two halves.

CON

The bowl’s narrow edge provides more force at impact, shattering the shell
