BLACKCURRRANT PUREE
INGREDIENTS
500g blackcurrants
20ml lemon juice
65g caster sugar
METHOD
Place all ingredients and 2 cups water in medium saucepan, and bring to a boil.
Reduce heat to medium, and cook for 10 minutes, or until blackcurrants have broken down and sauce is thickened. Press mixture through a fine sieve into a bowl.
BLACK LIME SORBET
INGREDIENTS
600g blackcurrant puree
200g black lime puree
100g water
100g white sugar
64g corn syrup
METHOD
Combine water, sugar and corn syrup in a small saucepan. Bring to boil, turn off and
