OCEAN’S BOUNTY
SEAFOOD AND BACON SOUP
The bacon imparts its smoky flavour to the seafood in this delicious soup.
SERVES 6 PREPARATION: 20 MIN COOKING: 30 MIN
about 45ml (3T) oil
6 back bacon rashers, chopped
1 small onion, finely chopped
1 red pepper, chopped
50ml cake flour
7,5-10ml (1½-2t) fish spice mix
500ml (2c) hot milk
2 bay leaves
750ml (3c) fish stock or vegetable stock
2 ripe tomatoes, blanched and chopped
200g potatoes, diced (optional)
salt and freshly ground pepper
1 pack (700g) seafood mix
boiling water
a few cooked mussels in their shells
TO SERVE
handful of chopped fresh parsley
freshly baked bread
fresh lemon wedges
1 Heat a little oil and fry the bacon until done. Add the onion and red pepper and fry until soft, adding more oil if needed.
2 Stir in the cake flour and fish spice and mix well. Gradually add the hot milk while stirring. Add the bay leaves and stock and bring to the boil, stirring often.
