PRESSURE COOKER CHRISTMAS PUDDING
Serves: 8 Prep/cooking time: 1 hour 45minutes
INGREDIENTS
3 cups mixed dried fruit
3/4 cup prunes, finely chopped
3/4 cup raisins, finely chopped
3/4 cup water 1 cup firmly packed dark brown sugar 125 g butter, chopped coarsely
1/2 tsp bicarbonate of soda 3 eggs, beaten lightly 3 cups stale breadcrumbs
3/4 cup self-raising flour 2 T cocoa powder 2 tsps mixed spice 1 tsp ground cinnamon 80 ml dark rum
METHOD
1. Wash combined fruit under cold water and drain. Combine fruit, the water, sugar and butter in a medium saucepan. Stir over medium heat until the butter melts and the sugar dissolves. Bring to the boil. Reduce heat and simmer, uncovered, for five minutes. Transfer mixture to a large heatproof bowl, stir in the bicarbonate of soda, and cool.
2. Stir eggs, breadcrumbs, sifted dry ingredients and rum into the fruit mixture.
3. Grease a 1,5 litre pudding steamer, and line base with a round of baking paper. Spoon the mixture into the prepared steamer and close the lid. If the steamer or basin does not have a lid, place a sheet of foil on a bench, top with
