Kate Elliot’s Christmas pudding

WORLD and European eventing champion Ginny Elliot says: “This recipe is from my sister-in-law’s grandmother. She splits the mixture into two puddings, one larger than the other, to cater for varying numbers.”

INGREDIENTS

2 oz plain flour½ lb suet1 apple, peeled, cored and grated2 oz almonds, skinned, chopped½lb breadcrumbs1½ lb raisins, sultanas, currants4 oz mixed peel½ lb soft brown sugar1 good tsp mixed spiceGood pinch of saltGrated rind and juice of 1 lemon4 eggs3 fl oz rum orMilk, if necessaryButter for greasing
