In 2017, Garry Howard, then the Mayor of Buller District, which includes Westport, won the whitebait cook-off at the town’s annual Whitebait Festival. This is his recipe. It’s the absolute opposite to most whitebait patties, which have a high proportion of egg to fish.

THE MAYOR OF WESTPORT’S WHITEBAIT PATTIES

1 free-range egg, separated
¾ tsp salt
zest of 1 lemon
1 tsp plain flour
500g fresh whitebait, rinsed
freshly ground black pepper
50-100g butter, to cook
lemon wedges, to serve

Whisk the egg white and salt until stiff. Fold in the egg yolk, lemon zest and flour. Gently fold in the whitebait until just combined. Season well with lots of freshly ground black
