RAINBOW MARMALADE

Makes 6–8 250ml jars

1.75kg unwaxed mixed citrus fruits (oranges, lemons, limes, grapefruit, blood oranges, tangerines, clementines)
1.3 litres water
30ml (2 tablespoons) freshly squeezed lemon juice
1/2 vanilla pod, split lengthways and seeds scraped (optional)
1.5kg (7.5 cups) white granulated sugar

NOTE: Use up the citrus you have in your fruit bowl to make this,
