Lemon & poppy seed muffins (gluten-free)

MAKES 12

60g (2oz) coconut flour
110ml (4fl oz) golive oil
4 large free-range eggs
60ml (2fl oz) sweetener of choice (we used our organic agave nectar)
60ml (4fl oz) lemon juice
3 tsp poppy seeds grated zest of 1 lemon
1 tsp baking powder
½ tsp salt

1 Preheat the oven to 180°C/Gas Mark 4 and line a 12-hole muffin tray with muffin cups or paper cases.
